Easy Cheesy Quesadillas by Becki Bell I used to microwave cheddar cheese on a tortilla for a quick snack, but this recipe is only slightly more difficult (and much more satisfying!) Experiment with different kinds of cheeses and ingredients for a new twist every time you make it. I've done these quesadillas with tomatoes, guacamole, fresh salsa, and lime-grilled chicken.
Ingredients:
- 8 medium flour tortillas
- 1 cup grated monterey jack cheese
- 1 cup grated cheddar cheese (medium)
- 2 fresh jalapeno peppers, finely chopped
- 1/2 medium onion, finely chopped
- 3 tbs cilantro, finely chopped
In a large bowl, combine the cheeses, peppers, onions and cilantro. Divide the mixture into four even parts and spread one part between two of the tortillas.
Heat a non-stick frying pan over medium heat. Fry each side of the quesadillas (no butter or olive oil necessary) until the color is a light brown. With a pizza cutter, slice each quesadilla into six pieces and serve hot.
(Serves 4 as an appetizer or two as a meal) |
